- Mix cookie dough the night before
- In a large mixing bowl combine the butter, sugar, and egg. Mix at medium speed until creamy and well mixed.
- Change mixer speed to slow and add remaining cookie ingredients one at a time to the bowl: flour, baking soda, orange juice, vanilla extract. Mix until a soft dough is formed.
- Divide dough in half. Wrap each half in plastic wrap and place in the fridge over night, or at least for four hours.
- Preheat oven to 400 degrees. Line cookie sheets with parchment paper.
- Using one roll of dough at a time. Lightly flour surface to roll cookie dough to about 1/8 of an inch thickness. Cut shapes and place on prepped cookie sheet, about two fingers apart.
- Bake cookies for 5 to 10 minutes, or until edges are lightly browned. Allow cookies to cool for a minute on the cookie sheet before moving.
- Make Frosting. Combine all frosting ingredients in a mixer at a low speed. Adding more sugar to thicken, more milk to thin out the frosting until it is the consistency you like. Food coloring maybe added to give your cookies some flare.
- Frost cooled cookies as desired.
